I love eggs. They are an inexpensive form of complete protein and rich in nutrients like choline, vitamin B12 and vitamin D. While breakfast is my favorite meal of the day, eggs are easy to enjoy anytime! To celebrate National Egg Day, I’ve put together 18 of my favorite healthy egg recipes.
I always have more than one form of eggs on hand in my fridge, usually whole eggs and liquid egg whites. I like to mix them in recipes to achieve the protein level I’m aiming for while controlling the total calories and fat. Just in case you haven’t heard, the 2015 Dietary Guidelines removed cholesterol as a nutrient of concern so no need to limit your egg consumption unless your doctor feels it’s necessary.
As always, my recipes are made with little to no added sugars and whole grains whenever possible. Many of these can be made in advance and refrigerated or frozen to reheat later.
