Let me start by saying, I LOVE COTTAGE CHEESE! I know you are either totally with me or thinking, um, no thank you. If you are already a fan, you know the deal. If it’s one of those foods you like at a comfortable distance, I’m about to change your mind with 40 cottage cheese recipes you won’t believe!
I’ve been sitting across from clients for 20 years as a dietitian and I usually ask in the course of a session if the person likes cottage cheese. The response is typically a polarized one. Yes, I love it, or some form of a negative remark. Since protein is such a hot button topic, especially for breakfast, I’ve been including cottage cheese in so many of my recipes for years. Most people are shocked when I suggest blending it into smoothies and smoothie bowls. I then explain that once the texture blends away, you are left with a very creamy smoothie that’s less tart than one made with Greek yogurt so you need less added sweetness. Winner!
Cottage cheese is excellent in dishes calling for ricotta cheese as well like lasagna or baked ziti. Try it on top of Mexican meals instead of sour cream for a cooling touch without all of the fat. Stir it into eggs before scrambling (1 Tablespoon cottage cheese per 1 egg) for some creamy goodness. My hubby always tops his whole grain waffles with cottage cheese and chia seeds for a healthy breakfast. Yay!
Just a bit of technical info- NOT ALL COTTAGE CHEESE IS THE SAME!! Please look at the label- many brands have added gums and starches which increase the carbohydrate/sugar content and decrease the protein for the same amount of calories. Look for one that includes milk/cream, Vitamin A and salt. I like using 1-2% fat cottage cheese in recipes, nonfat is unnecessary and lacks the flavor and texture I’m looking for, while 4% is a bit too high in fat for me. You should find brands with 13-15 grams of protein per ½ cup serving, if there’s less, it usually means more added fillers. No thanks.
