During the Fall season, the cooler weather, Thanksgiving, family time…all may remind us of comfort foods. While these favorites are typically not the healthiest choices, I’ve got you covered with my fall comfort food makeovers with Greek yogurt!

Are you a fan of the super popular yet super sugary pumpkin spice latte from your favorite coffee shop? If so, I created a way to savor the flavor while benefitting from a make-ahead breakfast filled with 18 grams of protein. The secret ingredient is Dannon Light & Fit Pumpkin Pie flavored Original Greek nonfat yogurt.

Did you know? The 2015-2020 Dietary Guidelines for Americans recommend increasing intake of nutrient-dense foods, such as fat-free or low-fat dairy products, like yogurt. Yogurt is nutrient-dense, and many yogurts are a good source of protein and calcium. Greek yogurts typically contain more protein than regular yogurts. That’s why I love including it in my overnight oats recipes!

This Pumpkin Spice Latte Overnight Oats is one of my absolute favorite fall meal prep breakfast options because of the creamy texture, ease of preparation and the PSL flavor with a healthier twist. Spend a few minutes in the evening and breakfast is ready to grab and go in the morning with a piece of fresh fruit to round out your meal.

Ingredients
  

  • ½ cup old fashioned oats
  • 4 ounces cold brew coffee, regular or decaf
  • 1 teaspoon chia seeds
  • 1 5.3 ounce container Dannon Light & Fit Original Greek Pumpkin Pie Nonfat Yogurt
  • ¼ teaspoon pumpkin pie spice

Instructions
 

  • Add all ingredients to a jar or bowl and mix well.
  • Cover and refrigerate overnight.
  • In the morning, grab a spoon and enjoy. Sprinkle with extra pumpkin pie spice if desired.

Pumpkin Dijon Vinaigrette

One secret hack for making homemade salad dressing is to incorporate Greek yogurt with the oil and vinegar. It behaves like an emulsifier to help keep the dressing from separating. Plus, the yogurt’s sweetness helps to tame the acidity of the vinegar. No need to add any extra honey or sugar 🙂

Pumpkin Dijon Vinaigrette

Ingredients:

2 Tablespoons Extra Virgin Olive Oil
4 Tablespoons red wine vinegar
2 Teaspoons Dijon mustard
1 Tablespoon Dannon Light & Fit Original Greek Pumpkin Pie Nonfat Yogurt (a little more is fine)
1 clove of garlic, finely chopped (about ½ teaspoon)
salt and pepper to taste

Instructions:
Whisk all ingredients together in a small bowl. Cover and refrigerate to let flavors develop.

Serves 4.
1 serving = 2 Tablespoons
