When the temperature goes up, we all crave cool, refreshing snacks. This Mocha Frozen Yogurt Bark is a super easy way to enjoy a high protein, low sugar frozen snack.
In honor of the 6th birthday of the Recipe Redux, we’re celebrating by showing off healthy small bite dessert creations. The inspiration for this frozen yogurt bark came when I wanted something kind of sweet but had nothing in the house. It was too hot to make coffee and then it hit me- Mocha Frozen Yogurt Bark. It’s so easy! Just spread your favorite flavor of Greek yogurt onto a parchment paper lined baking sheet, add toppings and freeze for about 45 minutes.
I’ve only messed around with a few of these creations and each is yummy for different reasons. Try strawberry yogurt with freeze dried strawberries. I’ve made vanilla bark with dried cranberries and chopped pistachios. How about key lime yogurt with crushed graham crackers or coconut yogurt with almonds and toasted coconut? Yum!
For this recipe, I chose a brand of Greek yogurt with 120 calories, 8g sugar and 15g protein per individual 5.3 ounce container. For a bit of decadence, the topping is Trader Joe’s Dark Chocolate Cacao Nibs which only contain 3g sugar per tablespoon. Mini chocolate chips will work just fine if you can’t find the cacao nibs. - 1 container coffee flavored low sugar Greek yogurt (5.3 ounces)
- 1 Tablespoon chocolate coated cacao nibs (or mini chocolate chips)
- Spread yogurt onto a parchment paper lined baking sheet.
- Sprinkle with cacao nibs or chocolate chips.
- Freeze for about 45 minutes, break into pieces and serve immediately or freeze extra in a freezer bag or container with a lid.
