Equipment

  • Food Processor

Ingredients
  

  • 2/3 cup Fiber One TM Original cereal
  • 1/4 cup old fashioned oats
  • 1/4 cup ground flaxseed
  • 1/4 cup natural peanut butter
  • 1/4 cup canned pumpkin (notpumpkin pie filling)
  • 2 1/2 tablespoons sugar free maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 cup sugar free chocolate chips

Instructions
 

  • Place all the ingredients except the chocolate chips in a food processor and pulse until a ball of dough forms. You may need to add a little bit of water, 1 teaspoon at a time.
  • Transfer dough to a bowl and fold in chocolate chips.
  • Cover and refrigerate for about 20 minutes. Remove from the fridge and use a small scoop (about one rounded tablespoon) of dough and roll in your hands to form a ball.
  • Enjoy right away or store extra bites in the refrigerator in a container with a lid for several days.

Notes

Tip:
Nutrition analysis is for the recipe as written above, but this recipe could also work if you choose to swap almond or sunflower butter for peanut butter. Additionally, you could swap pure maple syrup or honey for sugar free maple syrup.

    Can this be frozen? I live alone and if I make 12 of these they are going to last me more than a “few days”. I could make a half batch but that seems like a waste of time so I was thinking of freezing them.

      Honestly, I’ve never frozen them though I would think it could work as long as they are well sealed and eaten within a few weeks to avoid freezer burn 🙂
