A fiber filled breakfast will help jump start your intake for the day and my Fiber One TM Cereal Crusted French Toast is a fun and delicious treat to get you “going”!

How much fiber do we need?

Did you know that 9 out of 10 Americans fall short of the recommended 25-38 grams of fiber per day? Of course, I always recommend fiber from plant foods first such as fruits, veggies, whole grains, nuts, beans, legumes and seeds. But sometimes we need some extra help.

Fiber doesn’t have to come in a sad capsule or a dusty jar of powder. Fiber One TM Original cereal is a real food substitute for fiber supplements -tastier, easier and more enjoyable. And, with a little creativity, we can enjoy it well beyond a traditional cereal bowl.

Each 2/3 cup serving contains 90 calories, no added sugar and 18 grams of fiber- that’s 65% of the Daily Value (DV) on average! We go through a LOT of it in my household. Most days, we enjoy it as a cereal with fruit, mixed into Greek yogurt, layered into a parfait or even as a topping for ice cream. Playing with food is fun and I love experimenting with ways to add Fiber One TM cereal into recipes for meals, snacks and desserts 🙂

Ways to cook with Fiber One:

With a wonderful balance of savory, sweet and crunchy, Fiber One TM Original cereal can work in so many different dishes.

  1. A quick pulse in a food processor or blender and you’ve got a coating to sub for bread crumbs to coat chicken, fish or even onion rings.
  2. Bake up some muffins or quick breads.
  3. Blend some in a smoothie or smoothie bowl for a fiber boost and added texture.
  4. Add to homemade trail mix.
  5.  Incorporate into homemade granola bars -and so much more!

This cereal crusted French toast is easy, sweet, soft, crunchy and versatile. Double the recipe to feed a family of four and make an activity out of it. Just think how well a DIY French toast bar will work at breakfast time or even if you decide to serve breakfast for dinner.

Kids can help to crush the cereal and to organize their favorite toppings into ramekins or even muffin tins. There’s no limit to the creativity and it’s always a good idea to empower kids (or grandkids) in the kitchen.

Fiber up with delightfully simple, whole-grain taste in this easy, yummy Fiber OneTM Cereal Crusted French Toast! Add your favorite fruit for an extra sweet morning.

Ingredients
  

  • 1 egg
  • 1 egg white
  • 1/3 cup 1% milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • pinch salt (about 1/16 teaspoon)
  • 2/3 cup Fiber One TM Original cereal
  • 4 slices light whole wheat bread (40-50 calories per slice)
  • nonstick spray

Instructions
 

  • Step 1: In one wide, flat bowl whisk together egg, egg white, milk, cinnamon, vanilla and salt.
  • Step 2: Add Fiber One TM to a zipper bag and crush with the back of a spoon until you have small pieces, not dust. Pour into a second bowl.
  • Step 3: Heat sauté pan on medium high heat and coat with nonstick spray.
  • Step 4: Cut bread diagonally so you have 8 pieces. Dip each piece into the egg mixture coating both sides, let excess drip off and coat both sides with cereal.
  • Step 5: Cook each piece on one side until browned and set, about 2minutes, flip and cook for an additional 1-2 minutes. Serve immediately for the best texture.

-Fruit – such as berries, pomegranates, sliced peaches, bananas or pears.
-Maple syrup (low sugar if desired)

Tips:

-Using bread that is on the way to stale will yield a firmer bite.
-In place of 1% milk, this recipe can work with your milk of choice.
-Top with your favorite fruit such as strawberries, blueberries, raspberries, blackberries, bananas, peaches and more.
-For extra protein, top with your favorite flavor of Greek yogurt or cottage cheese in addition to fruit.
– You can refrigerate the leftovers and microwave to reheat, though it won’t be as crispy as when first cooked.
