PB and J Smoothie Bowl

Smoothie bowls are a new and different way to enjoy your favorite blended beverage with a spoon. The trick is making it a little thicker and enjoying it in a bowl with toppings. Since it’s so important to include protein at breakfast, I have been incorporating protein powder and powdered peanut butter in many of my recipes. Combining powdered peanut butter*** with 100% grape juice is like flavor explosion. This PB and J Smoothie Bowl packs the taste of a peanut butter and jelly sandwich without any refined sugar. For less than 300 calories, you’ll benefit from 28 grams of satisfying protein to keep you going all morning. You may just lick the bowl!

Ingredients
  

  • 1/4 cup 100% grape juice
  • 2 T unsweetened vanilla almond milk
  • 1/3 cup low fat cottage cheese
  • 1/2 scoop vanilla whey protein powder approximately 2 Tablespoons
  • 1 teaspoon chia seeds
  • 3 Tablespoons powdered peanut butter**
  • 1 Tablespoon old fashioned oats
  • 1/4 medium banana for garnish

Instructions
 

  • Place all ingredients except banana into a blender and blend until desired consistency is achieved.
  • Pour into a bowl and place in the refrigerator overnight.*
  • When ready to serve, slice banana into VERY thin slices and place on top of the smoothie bowl. Dust with cinnamon and a few chia seeds for garnish and crunch.
  • *If consuming right away, add a few ice cubes to the smoothie before blending

292 calories, 5.7g fat, 1.1g sat fat, 9mg cholesterol, 420mg sodium, 36.4g carbohydrate, 6g fiber, 21.4g sugar, 28.1g protein

*** Powdered peanut butter is an amazingly versatile product. Traditional peanut butter packs 200 calories and 7 grams of protein per 2 T serving, powdered peanut butter has only 45 calories with 5 grams of protein for the same serving size.
