Chocolate Mousse Filled Strawberries

These decadent Chocolate Mousse Filled Strawberries are low in sugar, gluten-free, vegan, and have only 70 calories per serving! The secret ingredient adds protein and fiber too!

Let’s be honest, dietitians love chocolate too! And what’s not to love, good quality dark chocolate and cocoa powder contain flavanols which have been shown to support healthy circulation and blood flow. Unfortunately, many of our favorite chocolate indulgences are accompanied by an excess of calories and sugar. With Valentine’s Day, Easter, and Passover holidays approaching and the arrival of American Chocolate Week (yes, that’s a thing), I’m excited to share my favorite low sugar Chocolate Mousse Filled Strawberries with all of you!

This decadent, guilt-free dessert contains only 5 ingredients and is a cinch to make. They lasted in my frig for a few days without losing their texture (I had to threaten my family not to touch them). Serve them for a totally yummy and dare I say, nutritious dessert. With only 70 calories in a 4 piece serving, it’s a no-brainer for holidays or any day.

The secret ingredient- soft/silken tofu- adds protein, heart-healthy fat, and creaminess without dairy. I know there are people who balk at the mention of tofu, but it’s such a fabulous addition to desserts. It takes on the flavor of whatever you mix it with so the addition of chocolate, nut butter, or citrus flavors like lemon or lime create an amazing taste profile. You may even get away with eating these babies for breakfast! Think of how great they would be on top of whole grain pancakes, waffles, or Greek yogurt. This tasty treat is perfect for basically everyone including your friends and family following vegan, gluten-free, or diabetes meal plans. I suggest making a double batch, they won’t stick around for long.

Chocolate Mousse Filled Strawberries

Delicious, gluten-free, dairy-free, plant-based, and low in sugar, these are a treat for the whole family.

Ingredients
  

  • 3 ounces soft/silken tofu- blotted dry
  • 2 Tablespoons unsweetened cocoa powder
  • 2 packets stevia or preferred sweetener
  • 16 medium strawberries stems removed and hulled
  • 1 Tablespoon mini chocolate chips- vegan or sugar free varieties if preferred

Instructions
 

  • Blend tofu, cocoa powder, and stevia in a mini food processor or with a hand mixer until smooth. (Makes about ¼ cup plus 2 Tablespoons)
  • Transfer mixture into a zipper bag or pastry bag.
  • Cut off corner of zipper bag and pipe cocoa mixture into each strawberry.
  • Top each with chocolate chips (about 5-6 per strawberry)

Notes

Tips:
Some may prefer the mousse a bit sweeter, taste it first and add extra stevia if necessary. Remember that it will pick up sweetness from the berries and chocolate chips. 
To make the filling and serving process easier, cut off the very bottom tip of the strawberry to create a flat surface and allow it to stand up.
If stevia is not your thing, to keep it sugar-free, try monk fruit, erythritol, or allulose. And you wish to use regular sugar, just mix it in and taste as you go to avoid over-sweetening. You can also try maple syrup or brown sugar.

    I love using tofu in chocolate mousse. Never one can ever guess the “secret ingredient” and it makes it a whole lot healthier without sacrificing even a smidgen of taste. Yum! And awesome idea stuffing it into strawberries. That makes them double yum 🙂
