Chocolate Mousse Filled Strawberries

Delicious, gluten-free, dairy-free, plant-based, and low in sugar, these are a treat for the whole family.

Ingredients
  

  • 3 ounces soft/silken tofu- blotted dry
  • 2 Tablespoons unsweetened cocoa powder
  • 2 packets stevia or preferred sweetener
  • 16 medium strawberries stems removed and hulled
  • 1 Tablespoon mini chocolate chips- vegan or sugar free varieties if preferred

Instructions
 

  • Blend tofu, cocoa powder, and stevia in a mini food processor or with a hand mixer until smooth. (Makes about ¼ cup plus 2 Tablespoons)
  • Transfer mixture into a zipper bag or pastry bag.
  • Cut off corner of zipper bag and pipe cocoa mixture into each strawberry.
  • Top each with chocolate chips (about 5-6 per strawberry)

Notes

Tips:
Some may prefer the mousse a bit sweeter, taste it first and add extra stevia if necessary. Remember that it will pick up sweetness from the berries and chocolate chips. 
To make the filling and serving process easier, cut off the very bottom tip of the strawberry to create a flat surface and allow it to stand up.
If stevia is not your thing, to keep it sugar-free, try monk fruit, erythritol, or allulose. And you wish to use regular sugar, just mix it in and taste as you go to avoid over-sweetening. You can also try maple syrup or brown sugar.
