Did you know that canned tomatoes can be more nutritious than fresh? That’s right! By cooking and canning tomatoes, it increases the amount of lycopene which has been shown to decrease the risk of prostate cancer in men. Since June is Men’s Health Month, I’m sharing 40 Delicious Canned Tomato Recipes shared by my fellow registered dietitian food bloggers!

First, let’s talk about why you want more canned tomatoes in your life.
*By turning to canned tomatoes, you can enjoy their nutritious contribution of vitamin C, fiber, potassium, and the antioxidant, lycopene all year long. In fact, the lycopene is more bioavailable in the form of canned tomatoes vs. fresh tomatoes. Plus, enjoying canned tomatoes—harvested at their flavor and nutrition peak—during the off-season is a much more sustainable choice than fresh tomatoes, which must be shipped long distances. That’s because tomatoes are grown in the summertime, for 75% of the year the fresh tomatoes you buy in the supermarket were likely grown in a greenhouse or shipped from all over the world. Of course, fresh tomatoes are amazing when in season and local (otherwise they were picked too early so they stay red longer, but never developed full ripe flavor). That’s why all year long, canned tomatoes are going to be your most consistent and flavorful option.
*Tomato products account for 80% of the lycopene in the US diet—and it is more available to the body in cooked or processed tomatoes than fresh.
*A number of studies have found that eating tomato products regularly can help protect against prostate cancer. One meta-analysis of 11 case-control studies and 10 cohort studies found that those with high intakes of cooked tomato products had a 19% lower risk of prostate cancer.
*The AICR’s (American Institute for Cancer Research) comprehensive report on cancer and diet indicates that there is convincing evidence for a decreased risk of prostate cancer by consuming lycopene-rich foods.
