These are unusual times. The combination of spending 100% of my time at home plus a shortage of all baking ingredients in the supermarket led to an interesting dilemma. My daughter wanted to bake something; cake, cookies, cupcakes, whatever… and we don’t have any flour in the house.
It’s also Passover, and that means we aren’t supposed to use wheat flour or any leavening agents anyway. So, grandma had an interesting suggestion to make an almond cake. Challenge accepted. I have a huge bag of almond flour, one lemon and lots of sweeteners, frozen fruit and eggs. We are good to go.
This Lemon Almond Cake with Strawberry Sauce has a short ingredient list and can be adapted depending on what you have in the house. It’s sugar free, low in net carbs, gluten free, grain free, dairy free and keto friendly. It’s also Kosher for Passover. How’s that for a party pleaser?

I’m used to Passover desserts that are clearly different than everyday sweets. They usually don’t have dairy since they are served so close to the main meal that features some kind of meat. And, they are made mostly from a box which has tons of sugar and odd ingredients. This cake has simple, everyday pantry items and can be adapted to use regular sugar if you don’t have other sweeteners in the house. Also, since the almonds are only sprinkled on top before baking, sliced or slivered almonds will work as well if you don’t have whole almonds on hand.
This cake can be enjoyed any time of the year for any occasion. The flavor reminds me of the almond horn pastry that we used to get from a special bakery when I was a kid. 🙂

Sugar Free Lemon Almond Cake with Strawberry Sauce
Ingredients
- 4 eggs separated and at room temperature
- ½ cup granulated stevia, erythritol or monk fruit sweetener cup for cup measure
- 2-3 teaspoons lemon zest from a large lemon
- 1 ½ cups almond flour
- ¼ cup (1 ounce) almonds, chopped
- 1 Tablespoon stevia or erythritol confectioners blend (can use regular powdered sugar)
- Topping:
- 2 cups frozen strawberries
- 2-3 packets stevia or preferred sweetener
Instructions
- Spray a 9 inch cake or brownie pan with nonstick spray and cover the bottom with parchment paper.
- Preheat the oven to 350F
- In a medium to large bowl add egg yolks and ½ cup of preferred sweetener and beat with an electric hand mixer on high for approximately 3 minutes until the mixture is light yellow, thickened and smooth.
- Fold in the lemon zest and almond flour with a spatula until fully incorporated.
- Clean and dry the mixer blades.
- In a second mixing bowl, beat the egg whites until you have stiff peaks (about 2 minutes).
- Drop egg whites one large dollop at a time into the egg yolk/flour mixture and gently fold them in until thoroughly combined without overmixing.
- Transfer the batter to cake pan and sprinkle the top with chopped almonds.
- Bake at 350 for about 25 minutes or until the top is fully cooked and not wet.
- Meanwhile, microwave the frozen strawberries until warm and juicy, cut into smaller pieces if necessary and stir in packets of sweetener. Set aside
- Once cake is done, remove from the oven and let cool for 10-15 minutes.
- Flip and remove from the pan and let cool on a wire rack.
- Once cooled, dust the top with sugar free confectioners sugar blend
- Cut and serve with a few spoonfuls of strawberries.

Tips:
*Baking sweeteners can vary in composition. Some are cup for cup substitutes for sugar, others are more concentrated and you may need to do some math. Check the conversions on the package.
*You can microwave any fresh or frozen fruit to make a sauce like blueberries, cherries, raspberries, blackberries, peaches or pears.

Can you freeze this cake and is it suitable for Passover?
It is suitable for Passover and I have not frozen it so I can’t say for sure how it will fair. 🙂
Should there be oil or some other fat
There is plenty of fat in the eggs, almond flour and almonds so no additional fat is needed. Also, I didn’t feel the need to add salt. This is a very dense cake so the baking rules used for a fluffy traditional cake don’t apply here 🙂
