Fiber One Cereal White Chocolate Haystacks
I am proud to partner with Fiber One TM Original to bring you this post. I was compensated for my time and I only work with brands I love and use myself and with my family.
Everyone loves dessert, it’s part of a balanced diet and something to be thoroughly enjoyed. Finding a dessert with some nutritional benefit is a win-win and with these 2-ingredient Fiber One TM Cereal White Chocolate Haystacks you get amazing deliciousness with a bonus of a little fiber.
Haystack cookies are typically made with fried Chinese style crispy noodles which contain lots of extra calories and little to no fiber. Fiber One TM Original cereal is an ideal substitute to incorporate in this dessert! It’s so quick and easy to make and it’s customizable for every holiday.
These babies are seriously addictive. Every time I make a batch they are gone in a day. I suspect my college-age son is inhaling most of them, so I need to stash a few to make sure I get to enjoy some 🙂

Dessert with benefits
It’s no secret that I love Fiber One TM Original cereal. Several times per week for breakfast I mix it with unsweetened nut milk, protein powder, chia seeds and fruit. Check out my Chocolate Strawberry Protein-Packed Cereal Bowl for some inspiration. You may not think of cereal as a dessert ingredient, but it’s an opportunity to sneak some extra fiber into your day when 9 out of 10 Americans miss the mark on fiber goals.
I’ve said it before, Fiber One TM Original is the credible and practical solution to digestive health across eating occasions. With 90 calories and 18g Fiber per 2/3 cup serving, it provides 65% of the Daily Value (DV) of fiber which makes flaunting your fiber so easy to accomplish. It also contains no added sugar compared to a lot of other fiber cereals so it’s my go-to choice to boost fiber intake without supplements. Each scrumptious White Chocolate Haystack has 2 grams of fiber and who can stick to just one?
There are soooooo many ways to decorate these cookies to create a festive treat for ANY occasion!
These haystacks can be enjoyed for any holiday, simply change the toppings to reflect the colors of the season:
* Use red and blue sprinkles for patriotic holidays like Memorial Day, 4th of July or Labor Day.
* Add red and green for Christmas, or crush up some candy canes for a minty twist.
* Sprinkle with blue and silver for Hanukkah.
* Try gold and silver sprinkles for New Year’s Eve or bridal showers.
* Use team colors for any sporting events or gameday gatherings like the Super Bowl.
* Use pink or red for Valentine’s Day.
* Think of pretty pastels like pink, and pale shades of green, purple and blue for Easter.
* Combine orange and yellow for fall holidays like Halloween and Thanksgiving.
* Switch it up with butterscotch or peanut butter flavored chips.
* Add dried fruit and/or freeze-dried fruit to add extra fiber, nutrients and pretty colors as well.
