Pancake cereal is a viral food trend that emerged during our period of collective quarantine. I mean, who doesn’t love pancakes and cereal? I certainly love both, but not all the sugar and refined carbs that usually accompany them. Enter my Low Carb Pancake Cereal recipe!

I mean, you can create pancake cereal so easily by simply making teeny tiny pancakes out of your family’s favorite mix. It’s not rocket science to prepare them, but as you can guess, I’m always trying to pack protein and fiber into my favorite commonly carbohydrate heavy recipes.

If you follow my social media channels, you know I make a lot of recipes using F-Factor 20/20 protein powder because it’s the only one on the market with 20 grams of fiber per serving. This pancake cereal recipe uses this specific protein powder, however, in the tips below, I’ll give a few other suggestions for packaged pancake mixes I like as well.

To milk or not? 

To be honest, I’m not sure how I feel about pouring milk over my pancakes. I figure you either love it or hate it, but that decision is totally up to you 🙂 I use fortified unsweetened plain or vanilla almond milk that’s only about 30 calories per cup to make sure I’m on the way to meeting my calcium needs for the day with no additional added sugar. Note: check the label on all of your plant-based milks to make sure they are fortified with calcium, most organic versions are not.

My cereal pancakes have added blueberries because, why not? Extra antioxidants and fiber are always a bonus. I also like to use a little bit of sugar free syrup and my favorite brands are Pyure and ChocZero. *

The reason I love F-Factor protein powder is that it packs the most fiber and protein for the least amount of fat and calories. Most other low carb pancake mixes are much higher in fat and calories and lower in protein and fiber. If you don’t have F-Factor protein powder, go for a mix with a higher protein content such as Kodiak Cakes, Flapjacked or Bob’s Red Mill Protein Pancake and Waffle Mix.*

How to Make Low Carb Pancake Cereal

This fun way to eat pancakes is low carb and packed with protein and fiber to keep you full all morning!

Ingredients
  

  • Pancakes:
  • 2 scoops F-Factor 20/20 unflavored protein powder
  • 1-2 packets stevia or preferred sweetener
  • 1/2 tsp cinnamon
  • 1/4 teaspoon baking powder
  • 1/2 cup liquid egg whites or whites of 4 eggs
  • 1/4 teaspoon vanilla extract
  • Toppings:
  • 3/4 cup blueberries or fruit of choice
  • 1 Tablespoon sugar free maple syrup - preferably high fiber like Pyure or Choc Zero
  • 1/2 cup unsweetened vanilla almond milk or other milk of choice- dairy or nondairy

Instructions
 

  • Spray a griddle or nonstick pan with nonstick spray and heat on medium until warm.
  • Mix all pancake ingredients together until all lumps disappear.
  • Pour mix into a zipper bag or pasty bag and cut off one corner. (If you don't have either of those a measuring cup with a spout will do.)
  • Pour batter to form quarter sized pancakes. Flip when the top is bubbly and cook on the other side until firm.
    Makes 1 serving- about 30 pancakes.
    Serve pancakes in a bowl topped with blueberries and syrup- add your favorite milk as well if desired.
