Feeding a family is no easy task, especially when you are faced with the challenge of picky eaters. These Turkey Meatloaf Muffins are a portion-controlled, easy, and healthy option for the whole family.

During these challenging times, many of us are adjusting our food choices due to decreased shopping trips, lack of access to certain ingredients, financial changes and more. While many of us typically find it harder and harder to sit down for dinner as a family with the demands of work, school and activities. 

The dramatic change in our lives at the moment necessitates more home cooking and affords more family time to dine together, which is a wonderful opportunity to make family mealtime a priority.

Why do Family Meals Matter?

The Family Meals M0vement began as a campaign to shine a light on the importance of family meals during one month in 2015 and has grown exponentially over a period of five years.

The data on why family meals matter is positively overwhelming.

Studies show again and again the significant, measurable scientific proof about the positive, lifelong benefits of family meals.  Family meals nourish the spirit, brain and health of all family members. According to the Food Marketing Institute FMI Foundation:

  • Regular family meals are linked to higher grades and self-esteem and delayed sexual activity. 
  • Children who grow up sharing family meals are more likely to exhibit prosocial behavior as adults, such as sharing, fairness and respect. 
  • With each additional family meal shared each week, adolescents are less likely to show symptoms of violence, depression and suicide, less likely to use or abuse drugs or run away, and less likely to engage in risky behavior or delinquent acts.
  • Adults and children who eat at home more regularly are less likely to suffer from obesity.
  • Increased family meals are associated with greater intake of fruits and vegetables.

I hope you enjoy these Turkey Meatloaf Muffins. There are not many meal choices that get two thumbs up from my entire family; this is one of them! Plus, most of the ingredients are common pantry and fridge staples that most of us probably have on hand when it’s tough to make a trip to the supermarket.

Ingredients
  

  • 1 pound lean ground turkey 93% lean 7%fat
  • 1 egg
  • 1 slice high fiber bread -ground into bread crumbs and toasted
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 3 Tablespoons ketchup (preferably low sugar)
  • 1 1/2 teaspoons Worcestershire
  • 2 ounces (2 large) white mushrooms, diced small
  • 2 Tablespoons milk or unsweetened nut milk
  • 3 Tablespoons dehydrated onions
  • 1/2 teaspoon dijon mustard

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a large bowl.
  • Divide mixture into 12 muffin tins sprayed with nonstick spray or lined with foil muffin cups (about 1/4 cup each).
  • Bake for approximately 30 minutes or until the internal temperature reaches 165 degrees.

Tips:

– Make the recipe dairy free by using almond milk instead of cow’s milk.
– If you wish to use breadcrumbs, substitute 1/3 cup seasoned breadcrumbs for the homemade version.
– If you do not have fresh mushrooms, you can use canned, just dice them very small or pulse for a couple of seconds in a food processor.
– A typical serving is 3 meatloaf muffins for a meal so one recipe would feed a family of four unless you have little ones who eat less.
