On busy mornings it’s always a challenge to feed the family a balanced breakfast in a flash. Multiple scientific studies demonstrate the cognitive benefits of eating breakfast such as improved memory recall time, improved grades and higher test scores. No wonder they say breakfast is the most important meal of the day! It’s no secret that I’m a huge fan, enough that I wrote an entire cookbook devoted to protein-packed breakfast recipes.

One of the easiest ways to increase protein at breakfast is to include eggs which are one of the most affordable sources of high-quality protein at under $.20 each. Eggs are a nutritional powerhouse with one large egg containing 6 grams of protein, nine essential amino acids, and varying amounts of 13 vitamins and minerals, all for 70 calories.

No matter what you may have heard in the past, don’t toss the yolk! Yolks contain most of the egg’s nutrients like vitamin D, vitamin B12, selenium and more than 40% of the protein. Eggs also include two important nutrients for brain health- choline and lutein. Two recent studies showed a positive association between brain lutein content and academic performance in children, and choline is important for fetal brain development and has been shown to positively impact cognition in adults. A win-win for adults and kids alike.

I developed this Strawberry Vanilla Protein French Toast recipe to help make your hectic mornings easy and nutritious. Simply prepare it at night or on the weekend and reheat quickly before heading out the door to work or school. One serving provides 23 grams of protein and a whopping 12 grams of fiber which is almost 50% of the recommended daily value for women thanks to the strawberries and whole grain bread. Score!

And eggs are not only for breakfast! This dish serves as a fun “breakfast for dinner” or a Meatless Monday meal the whole family can enjoy.

Ingredients
  

  • 2 large eggs
  • 1/2 teaspoon cinnamon
  • 1 5.3 ounce container vanilla Greek yogurt, divided
  • 6 slices light whole wheat bread, approximately 40 calories per slice
  • 2 cups fresh strawberries, sliced

Instructions
 

  • Beat eggs in a medium bowl.
  • Whisk in ½ cup vanilla yogurt and cinnamon.
  • Heat a griddle or saute pan on medium to medium high heat and coat with nonstick spray (I used coconut oil spray)
  • One at a time, dip both sides of the bread into egg mixture and place in pan, flipping once lightly browned.
  • Transfer to a plate and cover to keep warm.
  • When ready to serve, stack 3 slices of French toast, top with 1/2 of remaining yogurt and 1/2 of the strawberries. Add a touch of maple syrup and cinnamon if desired.

Notes

Makes 2 servings, 3 slices each. Simply double it to have extra on hand for the school week.

TIPS:

There are many ways to adapt this recipe to suit your family’s nutritional needs or to substitute what you have on hand in the fridge.

For bread:
I prefer 40-50 calorie high fiber bread to keep the calories lower and fiber high. My favorites are:
Schmidt Old Tyme 647 bread with 40 calories and 7 grams fiber per slice
Nature’s Harvest Light Wheat or Multigrain bread with 40 calories and 3g fiber per slice 
Alvarado Street Bakery Sprouted Flaxseed Bread with 50 calories and 2.5g fiber per slice
You can also use your favorite gluten free bread, just choose one with more fiber.

For yogurt:
I always look for Greek yogurts with the least total sugar, preferably somewhere between 2-9 grams for the 5.3 ounce container.
You can always use plain Greek yogurt, add a little vanilla extract and your own preferred sweetener like stevia or monkfruit. To switch it up, change the flavor of the yogurt. Use cherry Greek yogurt and top with fresh or frozen (defrosted) cherries or use blueberry yogurt and top with blueberries. It also works with banana, peach, raspberry and more. Get the drift? 
OR, for a dairy free recipe, look for a lower sugar plant-based yogurt. The protein content will decrease but it allows those who cannot have dairy to enjoy the meal.

Toppings: 
I like to use extra Greek yogurt to top the French toast before adding the fruit. It provides creaminess and sweetness so syrup isn’t necessary. If you are a syrup person, I love high fiber, low carb syrups like Pyure Organic or ChocZero. (affiliate links)
You can always drizzle a bit of pure maple syrup, sorghum syrup or honey if you prefer the real thing or don’t mind the added sugar.

You can also sprinkle on toasted and chopped nuts or pumpkin seeds for extra crunch and heart-healthy fats.
