This low carb Buffalo Chicken Flatbread Tortilla Pizza recipe is a low calorie, high fiber, high protein, keto-friendly appetizer for game day or any day.

This football season has been anything but typical, but that doesn’t change the fact that hot wings are a staple of any tailgate or game day party. I love spicy food, especially the little extra calorie burn that comes from consuming hot wings. However, I’m definitely not into the super fatty skin and high calorie content that accompanies traditional wings.

This Buffalo Chicken Flatbread is my way of enjoying hot and spicy chicken without a ton of saturated fat. By using a high fiber tortilla or flatbread, you’ll stay full for a longer period of time and hopefully resist the temptation of the less healthy party items. This flatbread makes a great lunch or single portion dinner- just add a piece of fruit and a salad or some veggies like carrots or celery sticks to cool down the heat.

This recipe is SERIOUSLY filling! With 37 grams of protein and 15 grams of fiber (depending on the tortilla you use), you will benefit from a delay in digestion which will keep you satisfied for hours. Also, it’s diabetes and prediabetes-friendly and appropriate for those taking weight loss medication. SO, it’s satisfying, low in calories, carbs, sugar, and high in protein. SCORE!

How to choose a flatbread or tortilla:

The key to picking a low carb or keto-friendly flatbread or tortilla is to check the fiber content vs total carbs. There are so many options available in regular supermarkets, big box stores and warehouse clubs that I guarantee there will be at least one available where you shop. 

The one I used in this recipe and my family’s hands-down favorite is the Mission Carb Balance soft taco size tortilla. We buy them at Costco but they are available in all of our favorite stores including Target as well. It packs 15 grams of fiber into one delicious tortilla with 19 grams of total carbs. That’s over 50% of your fiber goals for the day. Though I always recommend getting your fiber from whole foods like fruit, veggies, nuts, beans, seeds, and whole grains, these can play a role in boosting your intake for those who have trouble hitting the 25-38 grams per day recommended by the Dietary Guidelines.

This low carb, keto-friendly version of a buffalo chicken flatbread pizza is packed with protein and fiber.

Ingredients
  

  • 1 high protein/high fiber tortilla or flatbread between 60-100 calories
  • 1 Tablespoon whipped cream cheese
  • 3 ounces grilled or rotisserie chicken shredded
  • 1 Tablespoon buffalo hot sauce (I love Primal Kitchen)
  • 2 Tablespoons crumbled goat cheese loosely packed
  • 1 Tablespoon grated Parmesan cheese
  • shredded lettuce for garnish

Instructions
 

  • Lightly toast tortilla/flatbread for 3 minutes.
  • Spread cream cheese evenly on flatbread.
  • In a small bowl, combine chicken and hot sauce.
  • Distribute chicken evenly on flatbread.
  • Sprinkle with goat cheese, then Parmesan.
  • Bake directly on rack in toaster oven or wall oven at 400 degrees until cheese is melty and tortilla is golden brown, approximately 5-8 minutes. Take care not to burn the flatbread.
  • Top with desired amount of shredded lettuce.

Note- the sodium content of this recipe is a bit high- 1280mg, but considering that hot wings served in a restaurant can contain 4000-5000mg of sodium per serving (upwards of 500mg each wing,) this will save you a ton of salt, fat and calories.
