A gorgeously ripe avocado is a thing of beauty. This deliciously creamy Avocado Black Bean Salad is one of my favorite ways to enjoy them. 

California avocados are a nutrient-dense fruit that contributes nearly 20 vitamins, minerals, and phytonutrients per one-ounce serving (1/5th of a medium avocado). With their flavor, texture, nutritional value, and culinary versatility, California avocados can be enjoyed all day from breakfast to lunch to dinner, and in snacks and desserts.

Quick and easy ways to include more avocados in your life:

– Avocado toast (duh). 
Spead some creamy avocado on your favorite toasted bread and top with some extra protein such as turkey bacon, chicken sausage, sliced turkey, smoked salmon, or sliced hard boiled eggs. 

– Add sliced avocado to nearly any sandwich or wrap.

– Include smashed avo in your tuna salad to replace mayo.

– Avocado is a wonderful add-in to salads, grain bowls, chili, burritos, quesadillas,  bean salads, poke bowls, burgers, and omelets.

– Avocado can replace oil in baking or add creaminess to icing, pudding, cheesecake, and pies. 

– Avocado adds healthy fats and creaminess to smoothies.

 

Avocado + Black Beans + Tomatoes = a trifecta of fabulous flavors.

This nutrient packed side dish is plant-based and gluten-free with a whopping 11 grams of fiber and 7 grams of plant protein per serving. Chucky enough to eat with a fork as an appetizer or side, it’s fabulous paired with tortilla chips or veggies. It’s also a satisfying lunch served with tuna or cottage cheese. Spoon some over an omelet, burger, or grilled fish.  The possibilities are endless!

Ingredients
  

  • 1 teaspoon finely chopped garlic approximately 1 large clove
  • ½ red onion chopped (about ½ cup)
  • ½ teaspoon Kosher salt
  • ½ teaspoon fresh ground black pepper
  • 3-4 Tablespoons fresh lime juice 1 medium to large lime
  • 1 teaspoon Sriracha chili sauce
  • 2 avocados pitted and cut into cubes
  • 1 cup grape tomatoes halved
  • 1 cup black beans rinsed and drained (preferably low sodium)

Instructions
 

  • Add garlic, onion, salt, pepper, lime juice and Sriracha to a bowl and combine. Gently fold in avocado. Add tomatoes and beans and gently combine.

Notes

Makes 4 servings, serving size 1 cup: 218 calories, 13g fat, 2g sat fat, 256mg sodium, 21g carbohydrate, 11g fiber, 3g sugar, 7g protein. Vitamins and minerals: 8% Vitamin A, 55% Vitamin C, 3% calcium, 27% iron.
If you don’t like spice, try adding half of the Sriracha and taste before adding the full teaspoon. You can also use regular hot sauce if Sriracha is not available.
